Creative with the Garden Harvest
Our garden is finally coming into its harvest glory….about one month behind schedule due to
STRANGE Spring weather.
I was gone for four days. Mandy did some harvesting, but I got to bring in a haul the day after I returned home. First I went to the garden with a bowl and a colander. Then I took three boxes out there. Finally I enlisted help in bringing in the bounty…about 100 pounds worth. The poundage included winter squash.
This year we are growing buttercup squash, a winter type with intense orange flesh, meaty texture, and sweet, rich flavor. Our squash are huge for this variety! Very exciting. Only one problem: two tiny cotton tailed rabbits were getting in under the garden gate and eating the newly developing fruits. We’ve plugged the hole. The rabbits are cute, but I think they had enough free garden stuff for a while!
Anyway, the veggies were so beautiful, Mandy started posing them for a photo shoot. While the veggies were still posing, I had to go back to the garden for additional food stuff for lunch. Couldn’t disturb the artistic pile on the countertop!
I had to be creative in a flash here….different sort of artistry. What I came up with was a great discovery:
Sauté a few cloves of chopped garlic in oil.
Toss in some shredded greens, like chard. I used a Japanese kale.
Toss to coat all of the greens with garlicky oil.
Add a little water to steam the veggies.
Cover and cook for about five minutes.
Add pealed, diced tomatoes and salt.
Toss just to get the mixture warm.
Put some slices gruyere on top and cover until the cheese melts.
MMMMMmmmm good!
We haven’t come up with a name for this dish yet. But I’m sure we’ll be doing it again. It was great served along side a piece of meatloaf. We licked out platters clean on this one.
